This month, we’re shining the spotlight on Lauren Hart, who has been a part of our team for nearly 7 years! Leading our Accounts & Finance department, Lauren’s work ensures the smooth operation of our diverse business. From crunching numbers to keeping records in check, her days are as varied as they are busy. Let’s dive into her daily life, favourite things about the farm, and what makes her role so unique!

If you could describe Hollow Trees Farm in three words, what would they be?
Seasonal, interesting, beautiful!
What does a typical day look like for you?
Each day of the week brings different tasks which keeps my job very varied. I spend a lot of time analysing our sales data and ensuring that our records are up to date.
We have a lot of deliveries each day at the Farm Shop so there is a lot of paperwork to process (and lots of suppliers to pay!). I love maths and food and this job has lots of both! It’s such a diverse business with an amazing team of people. It’s very interesting to work with so many people who are doing such different jobs. I get a huge insight into all the aspects of the business here by allocating all of our sales and purchase data. It’s a very colourful office job!
Favourite season on the farm and why?
Autumn! The farm is full of trees that turn into the most gorgeous browns and oranges and the farm shop is full of pumpkins, beautiful blue crown prince squashes and some comical gourds! “Holloween” takes place in October which is always very hands-on and great to see so many visitors having fun.
If you could order anything from the Farm Café, what would be your perfect meal or go-to
treat?
A Suffolk Caesar Salad! Though in the colder months, a brie, cranberry and crispy bacon toastie! Our daily specials always make me very hungry!
If you could have any superpower, what would it be?
A simple one really – I’d love to have more spatial awareness and not drop nearly everything that I pick up!!
What are your hobbies and interests?
I love to paint. Currently, my time painting is spent painting the walls of my house as we’ve been renovating for the past couple of years, but I hope to get back to painting animal portraits soon! I’d also love to learn modern calligraphy this year. I love cooking (and eating my way around East Anglia) and exploring the countryside with my dog, Charlie.
