Meet the Team – James

Our ‘Meet the Team’ series is all about introducing you to the amazing people behind the scenes at Hollow Trees Farm. This month, we’re shining the spotlight on James Doyle, who has been a vital part of our team for 10 years!

As our Butchery Manager, James plays a key role in ensuring our Farm Shop is always stocked with the finest quality meats, expertly prepared and ready for our customers to enjoy. From breaking down our home-reared meat to crafting a wide variety of products, James’ days are busy, rewarding, and full of variety.

Let’s take a closer look at what makes his role unique, his favourite things about the farm, and what he enjoys in his spare time!

If you could describe Hollow Trees Farm in three words, what would they be?

Diverse, rewarding, enjoyable!

What does a typical day look like for you?

Every morning starts with preparing the butchery counter for the fresh day ahead. I spend time breaking down our home-reared meat, making sure we have a fantastic selection of cuts available. Throughout the day, I’m busy preparing our wide range of products, from sausages and burgers to joints and steaks, ready for our customers. No two days are exactly the same, and I love being able to share my knowledge with customers, helping them choose the best cuts and giving cooking tips along the way. It’s a hands-on job, but that’s what makes it so enjoyable!

Favourite season on the farm and why?

Summer! It’s BBQ season, which means we get to create an exciting variety of BBQ products. From classic sausages and burgers to marinated meats and kebabs, it’s always great to see customers getting inspired for their summer BBQs. Plus, the farm is buzzing with visitors enjoying the sunshine!

If you could order anything from the Farm Café, what would be your perfect meal or go-to treat?

I’d go for something from the specials board—especially if it’s made with Hollow Trees’ home-reared meat. It’s always great to see the meat we prepare being used in delicious, freshly made dishes.

If you could have any superpower, what would it be?

I’d love the power to turn vegans into carnivores! Now that would be an interesting skill for a butcher to have!

What are your hobbies and interests?

In my spare time, I enjoy watching films, playing darts, and most importantly, spending time with my wife and two daughters. Family time is really important to me, and I love making the most of it whenever I can.
