Our gammon comes direct from the Hollow Trees Butchery to ensure you always have the finest meat, properly prepared. We have once again joined forces with Bramfield Meats this year to produce meat using our own and local pigs.
When you buy your gammon you have a choice between Suffolk Cure and Beer Cure. Suffolk Cure is a traditional technique that has been used to cure and smoke hams in the region for decades. Preserving the meat in this way gives it a good flavour that is unique to the area, and is as distinctive and well regarded as Parma or Serrano ham.
Beer Cure gives the meat a slightly sweeter, stronger flavour thanks to the beer it is cured in.
